Veggie Packed Bolognaise

This delicious and nutritious meal is a staple in my diet. It is incredibly easy to make, it freezes well and you can make multiple recipes from it during the week to keep your meals fresh and exciting.

 

Ingredients

  • 500g lean mince (beef or lentils)

  • 2-3 cloves fresh garlic, minced

  • 1 onion, diced

  • 2 carrots, finely diced

  • 1 red capsicum, finely diced

  • 2 zucchinis, grated

  • 2 cans of diced tomatoes

  • 1 tbsp tomato paste

  • Salt and pepper

  • 1 tablespoon Herbamare or herbs of choice

 

Method

1. On a medium heat skillet, place oil and stir in vegetables

2. Once the vegetables start to soften add in mince and stir until browned

3 Add the tomatoes and leave to simmer for 30 minutes. Serves 6

4. Place leftovers in freezer and have during the week. I use the mixture for tacos, having it as a side dish with roasted vegetables, switch out beef for lentils or chickpeas for a vegetarian option, have it on sourdough toast, have with zucchini noodles or gluten free pasta.
