Stuffed Capsicums

Ingredients

  • 1 whole onion

  • 2 cloves crushed garlic

  • 400g lean beef mince

  • 2 carrots dices

  • 2 zucchinis diced

  • 1 handful mushrooms diced

  • 2 cans diced tomatoes

  • 1 tablespoon tomato pasts

  • 2 cups of cooked quinoa or cauliflower rice

  • 2 tablespoons olive oil

  • 4 large capsicum

  • 1/2 cup cheddar cheese

Method

  1. Preheat oven to 180C

  2. Bring a fry pan with some oil to a medium heat and saute the onion, garlic and chopped carrots

  3. Use wooden spoon to break up mince and add to pan and cook for a couple minutes

  4. Add the est of the veggies and let simmer

  5. If using quinoa, make sue it is cooked per instruction. if using cauliflower rice, blend cauliflower florets in a blender until size of rice. Blend quinoa or cauliflower into the beef mixture.

  6. Carefully cut lids off 4 capsicum and remove seeds

  7. Place capsium bases on an oven tray lined with baking paper and place 3/4 of mixture in

  8. Top with cheddar cheese and place in the oven for 30-40 minutes.
