How do you like your eggs? Egg Recipes for everyone

Eggs are beneficial for good health and should be eaten each week to optimise your nutritional status.

Both the white and yolk of an egg are rich in nutrients- protein, vitamins and minerals to support energy levels, lowers cardiovascular risk and build strong muscle.

There are so many ways to cook eggs. Here are some of my favourite egg recipes that are super taste and nutrient-rich.

 

Breakfast Wrap (Makes 6 wraps= 3 serves)

Ingredients:

  • Wraps

  • 6 eggs

  • Pinch salt

  • 200g cream cheese

  • 1/2 finely desiccated coconut

  • olive oil

Method

  1. Mix eggs, salt and cream cheese in a bowl with a large spoon until smooth

  2. Lightly fold the desiccated coconut into the mix

  3. Heat a little oil in a small to medium fry pan and pour batter to cover the base to cook 3-4 minutes

  4. Lift the corner of wrap and if brown flip and cook opposite side

  5. Fill your wrap with vegetables of choice.

 

 

Poached Eggs and Vegetables

Ingredients

  • 2 large eggs

  • 1 small handful of cherry tomatoes

  • 1 small handful of asparagus

  • 1 small handful of mushrooms

  • 1 tablespoon fresh thyme

  • a little olive oil

  • salt and pepper

  • 1 slice of sourdough bread

Method

  1. Preheat oven to 200C

  2. Place tomatoes, asparagus and mushrooms in a baking dish

  3. Drizzle with olive oil and toss with salt, pepper and thyme, roast until tomatoes burst for 10-15 minutes

  4. While veggies are roasting, bring to boil water in a deep pan around 8cm for the eggs,

  5. Place apple Cider vinegar in the water and wait for small bubbles to arise, this is when the water is ready

  6. Crack the eggs into the water and wait 4 minutes

  7. Remove eggs softly and place on paper town to remove access water than place on serving plate.

  8. Gently transfer the roasted veggies from the oven onto the plate and serve with a slice of Sourdough bread

 

 

Banana and Raspberry Pancakes (serves 2)

Ingredients

  • 2 large ripe bananas

  • 4 large eggs

  • 1/2 cup fine desiccated coconut

  • 1 cup fresh raspberries

  • 1 teaspoon cinnamon

  • 1 teaspoons vanilla extract

  • A little oil

  • Dullpo of coconut yoghurt to serve

Method

  1. Whisk eggs in a medium bowl

  2. Mash bananas, then blend in eggs

  3. Add raspberries, coconut, cinnamon, and vanilla and stir

  4. Heat oil in a frypan and cook 2 pancakes on both sides until brown

  5. Serve with more fresh berries and a dollop of coconut yoghurt

 

 

Easy Frittata (serves 2)

Ingredients

  • 4 whole eggs

  • 8 egg whites

  • 1/2 red onion finely chopped

  • 1 whole capsicum finely chopped

  • 1 whole zucchini finely chopped

  • 1 whole tomato finely chopped

  • 1 handful of rocket and spinach leaves

  • 1/2 cup ricotta

  • salt and pepper

Method

  1. Preheat oven to 200 C

  2. Add a little oil and finely dices onion in a pan and cook for 3-4 minutes

  3. Add chopped zucchini and capsicum and stir

  4. Whilst veggies are cooking, whisk eggs and egg whites in a separate bowl

  5. When vegetables start to soften and brown, add tomato and stir through

  6. Line the bottom of an ovenproof baking dish with leafy greens

  7. Placed cook vegetables on the green and pour the egg mixture on top and sprinkle with the ricotta

  8. Place in the oven for 20-30 minutes

  9. Once golden brown, remove from oven and let cool before serving.

 

 

Easy Omelette

Ingredients

  • 2 Whole eggs plus 1 egg white

  • 1 cup of finely chopped veggies (capsicum, zucchini, tomato, spinach, mushrooms)

  • 1/2 cup ricotta

  • salt and pepper

Method

  1. Heat a little oil in a frypan on medium heat and add vegetables. Cook for 2-3 minutes

  2. crack eggs into a large dish and beat for a minute, add salt and pepper

  3. Pour egg mixture over the vegetables and turn the heat on low and wait 2-3 minutes

  4. Flip omelette and cook opposite side until brown

  5. Serve omelette with ricotta sprinkled on top
