Chicken Pesto Pasta

Serves 4


  • 2 whole zucchinis, spiralled (can also use Konjac noodles or gluten-free pasta)

  • 400g chicken dived

  • 1 cup mushrooms sliced

  • 1 cup cherry tomatoes

  • 2 tablespoons heaped pesto

  • salt and pepper


  1. Heat a little oil in a non-stick frypan

  2. Turn on to medium heat and add chicken and cook for 4-5 minutes

  3. Add in zucchini noodles and mushrooms, cook further whilst tiring

  4. Once chicken is cooked add cherry tomatoes

  5. Take off heat and add pesto and stir through

  6. Season with salt and pepper and fresh basil
